Ripe plums must be washed, cleaned of stalks and seeds. Mashed potatoes for pastes can be cooked on the stove or in the oven.

In the first case, cast-iron or non-stick dishes are necessary, at the bottom of which water is poured 1 cm high and sliced plums are poured.

The dishes are covered with a lid, the plums are cooked for 1 hour over low heat, you do not need to mix them.

Then the plum mass is removed from the heat and cooled.

The cooled plums are wiped through a sieve. Puree is boiled with the addition of sugar on a slow fire for 1 hour with continuous stirring.

In the second case, the finely chopped plums are placed in a heat-resistant dish and languished under a closed lid in the oven at medium temperature. After the appearance of the juice, sugar is added to them, the mass is mixed and returned to the oven. When the sugar is completely dissolved, the plums are cooled and rubbed through a sieve.

Finished puree laid out a thin layer on a baking sheet. To avoid burning, it is pre-lined with parchment paper. You should not make a layer of mashed potatoes too thin, otherwise the paste will tear when removed. Too thick mash will dry out poorly. The optimum thickness is 3–6 mm.

Prunes are more pleasant to eat when there are no bones in it, but if you dry the plum with the bone, its composition will become a little healthier, thanks to the substances in the bone.

There are many ways in which you can properly dry the plum at home and make excellent prunes, we will tell you about the most effective and popular.

In order to properly dry the plums in the oven, you should first lower them into boiling water for a couple of minutes, in which you will first need to add two teaspoons of soda.

After this time, the plums must be removed and allowed to cool to room temperature.

Now we can move on to the second stage. We preheat the oven to 70 degrees, the plums should be turned to the other side and dried as much as in the first stage. After five hours, the fruit must be removed and allowed to cool again.

At the third stage, the oven should be heated to a temperature of 75 degrees and, turning over the plums again, dry them until ready. If you make prunes this way, it will turn out incredibly tasty.

In order to properly dry the plums using an electric dryer (or as many call it, a fruit dryer) at home, you need to dip the fruit for a few minutes in boiling water, then wash them and wipe them with a paper towel. Then open the dryer and lay the plums on a special tray. In the event that you cut the plums, they should be put cut up.

Now we can start drying. It will take place in three stages, in the same way as in the previous recipe. First you need to set the temperature to 50 degrees and dry plums for 4 hours. Then remove the pan so that the plums can cool to room temperature.

At the second stage, the temperature should be set at 60 degrees and the plums should be dried for 5-6 hours. At the end of the stage, also remove the pan and allow the fruit to cool.

The last stage will take 5-6 hours, and it will be necessary to dry the plums at a temperature of 75 or 80 degrees. After that, ready prunes will need to be cooled and it will become ready for use.

Another method of drying plums can be considered as drying the prunes in a natural way: that is, in the sun. Dried fruits in this way will be rich in solar energy and will practically not lose the beneficial properties of fresh plums.

At night, the plums should be brought into the room, and carried out to the street only after the dew has come down, otherwise the fruit will not dry out well.

After you have dried the plums in the sun for 4 days, turning them over daily, then you should dry them in the shade for another 3 days.
